California Chili Recipe

I know what y'all are thinking...beans???
Some parts of the country include beans in their chili. Some are raised beans, some are raised no beans. The beauty here is beans are optional.
California Chili Recipe
2lbs Ground Chuck
1 Large Onion
1 Bell Pepper
1 Can Tomatoes (28oz) Diced or Crushed drained
1 Can Tomato Paste 4oz
2 Cloves Garlic Diced
1 Bottle Beer 12oz Dark. I like Guinness and Newcastle
1 Cup Chicken Stock
4 Tablespoons Spaulding's Chili Seasoning
2 Cans Kidney Beans Rinsed and Drained
Sharp Cheddar Cheese
English Cheddar Cheese
Salt
Pepper
Olive Oil
Chives for Garnish
In Large Saucepan Season Ground Chuck with a dash of Salt and Pepper. Brown over Medium Heat, Drain
Cut Onion and Bell Pepper into Large Chunks. Drizzle with Olive Oil and a Sprinkle of Salt. Place on Baking Sheet and Char Onion and Bell Pepper in Oven on Broil, Flip the Veggies every 5 Minutes till they take on a nice Char approx. 15- 20 Minutes. Remove Veggies as they are ready. The Pepper when ready as it should Char First. Dice
In Small Sauce Pot add 1 Cup Chicken Stock, Spaulding’s Chili Blend under Medium Heat and stir till Dissolved. Turn down and Simmer 5 Minutes.
Add Chuck, Diced Onion, Bell Pepper, Garlic, Stock Mixture, Tomatoes, Tomato Paste, and Beer to 5 Quart Crock Pot. Cover and cook on Low 6-8 Hours. During the last 30 Minutes of cook time, add Drained and Rinsed Kidney Beans (Optional).
Garnish with Shredded Cheese, Chives, and Sour Cream if Desired.
